Jason Dady, Executive Chef/Owner of Bin 555, came to San Antonio a mission to exceed his guests expectations with each and every visit. He acheived his mission with his first restaurant, The Lodge of Castle Hills, that he opened in 2001 with his brother, Jake.

Chef Dady's Mediterranean cuisine in a "small meze plates" format coupled with contemporary ambiance, an intimate bar and large patio make Bin 555 Restaurant & Wine Bar one of the most innovative restaurants in San Antonio.

Chef Dady's dedication to his mission and passion for food has been recognized on a national, regional and local level. He was honored to cook at the James Beard House in June 2005 and received national acclaim in February 2004 with a "Rising Star" chef award by Restaurant Hospitality.

Jake Dady, General Manager/Owner of Bin 555, joined with his brother Jason in opening The Lodge Restaurant. As the General Manager of The Lodge Restaurant, Jake is the man behind the scenes ensuring the utmost quality in hospitality. Jake began his career in the restaurant industry in Coppell, Texas, as the manager of one the most popular casual restaurants, CJ’s.

With passion and intensity for the being the best and requiring the top quality from the staff, Jake ensures that each and every experience in his restaurants are memorable ones for his guests.
